Assets and possibilities of valorization of the Moroccan carob

Focusing on the carob tree, this study highlights Morocco's significant role as a leading producer of carob, emphasizing its underutilized pulp with high nutritional potential. By examining samples from four regions, the research reveals notable variations in agro-morphological and physico-chemical properties. It also explores the formulation of new food products based on carob pulp and assesses consumer preferences, suggesting that Moroccan carob pulp could be a valuable resource for developing dietetic food items.
